Rice dishes are very versatile! Many things can be added to rice and I added okra! Recipe below…

One small chopped onion and three cloves of garlic. Add a little bit of coconut oil or which ever oil you like. I chose coconut oil because it’s not heavy, to heated pan and sautée onions and garlic. Cut up one red pepper or red chili pepper if you want a spicy dish and add to pan with onions and garlic. Cut up fresh parsley and add with pepper, tumeric for color and a pinch of salt(optional). Add fresh tyme…Stir constantly adjusting heat to medium/low. Add okra and tahini sauce, about two tbsp. While sautéing, rinse 1 cup of wild or brown rice and add to sautéed ingredients. Stir in rice with okra, chopped onions, garlic, red peppers, thyme, parsley, tumeric and tahini.

Salt is not really needed because the tahini sauce gives flavor, along with all sautée ingredients. Continue to stir rice with ingredients, leave heat on medium/low. Add about 1-1 1/2 cups of water and place lid on, cooking until rice is tender! Very flavorful!
